Exclusive extra virgin olive oil, obtained from olives solely by mechanical means, under controlled temperature conditions that do not in any way affect its properties or delicate taste.
This exceptional oil is pressed from two olive varieties – Koroneiki and Manaki, which grow in the Argolida region on the Peloponnese peninsula in Greece. The Manaki variety gives the oil its fruitiness and fullness, while Koroneiki imparts a pronounced aroma and a mildly spicy finish. Gemma oil is harmonious, delicately flavored, with a gentle bitter and spicy aftertaste. It is cold-pressed under strictly controlled conditions, without heating or adding water. It is naturally filtered, with the sediment settling at the bottom of large tanks in which the fresh oil is stored.
Gemma extra virgin olive oil is the product of the first cold pressing with a very low acidity – < 0.8% at the time of pressing.
Gemma extra virgin olive oil has higher thermal stability, making it suitable even for heat treatment of ingredients, best enjoyed in the following applications:
Pesto, soups, pasta, mashed potatoes, baking and desserts, dressings, mild and medium-strong cheeses, eggs, carpaccio, green salad, vegetables, seafood, fish, and ideal for bread dipping.
